[CITY HALL, SINGAPORE] we were at @brothbeyond_chijmes recently for a hotpot meal and we were really quite impressed by the quality of ingredients and the service provided by one of the server, Maine 😍
To me, the most important dish in a hotpot is the soup base and Golden Umami Broth 🍲 was the best. It was really rich and provided great flavour for any other hotpot dishes. Many of their dishes were served with dry ice, giving that fancy vibe to elevate your dining. All of the hotpot dishes were of high quality, and I loved Signature Mushroom Pork Ball 🐷 the most.
They serve a plethora of cooked dishes as well, and the one that stole my heart was their Live Boston Lobster Porridge 🦞, which had so much seafood umami! I like the crispy bits as well which added extra texture. The lobster itself was definitely fresh, as it was taken directly from a tank. Wagyu Prata 🥞 was also crispy on the outside and chewy within, with tender meaty filling which provided much flavour!

XL is really huge, 1 litre in size. Fresh tea packed with cut watermelon, orange, and lemon slices. Fruity, sweet-citrusy, and quite balanced. Moderately tea-forward without much astringency. Refreshing. Mmm...

Went for the chendol soft serve with just chocolate drizzle (skipped the pandan jelly and coconut). Creamy and gula melaka heavy but got too sweet halfway through.
The usual toppings would’ve helped balance things out and add texture. Portion’s big too and definitely a share-with-a-friend kind of dessert 》$7
(Medium - $6.60) need to stir well (bc of bottom will be bitter taste) and wait for tea mixed and ice melted a bit at least 10 mins. The taste was quite floral and sweet tbh for a while.
The Spicy Tan Tan Tonkotsu Udon ($12.90) features a rich and savory Tonkotsu broth with spicy sesame paste, minced meat, egg, kelp and udon noodles, drizzled in garlic oil. This is packed with so much flavour and absolutely delicious. Slurped all of this right down to the final drop!

Burpple 1-1 must be same drink. Can’t rly taste the rice oolong, sweetness come from the 30% sugar instead of the tea. Prolly try other drinks next time.
Really long wait for this popular restaurant (and questionable seating arrangements) but the food more than made up for it. First of all, GET THE SEAFOOD PANCAKE IT'S SO GOOD, thick and delicious and chockful of seafood bits, probably will return just to have this again it's THAT good. Also got the BBQ Set A which had generous portions of meat good for 3 pax, but we're terrible at grilling so I think next time we'll just get the pre-grilled platter instead! Japchye was alright and abalone porridge was pretty interesting, and we appreciated the free flow barley tea, banchan, lettuce, and garlic/green chilli for the grill. Overall, if I was in the area and the queue is manageable, would return.
From silky handmade rice noodles in a light, comforting broth topped with tender beef and tripe, to lamb that’s fall-off-the-bone good with zero gamey taste. The chewy, spicy potato noodles hit differently, and don’t skip the skewers, tender, and full of flavour. Somerset 313 just became our new noodle spot!
