This dish promised top grade MS9 Wagyu beef which was braised in a red wine demi-glace sauce. Interestingly, this was served with only one sheet of pasta. Called a โlasagnotteโ, the massive pasta sheet was cooked al dente.

Now the Wagyu beef was tender and deliciously fattier compared to the beef in their beef ragu with its flavours well infused into the sauce. The assorted mushrooms that were stewed in the sauce added a firm bite, texture, and umami that we enjoyed! The lasagnotte is a huge sheet and we wish there was more sauce to coat it. Some might find the texture as unvarying throughout the meal, so it may be a good idea to get this and a different pasta type to share โบ๏ธ
We couldnโt decide between the dumplings and croquettes and followed the staffโs recommendation to get this! Reminiscent of a ็บขๆฒนๆๆ (dumplings in chilli oil), the spicy vinegary sauce was very appetising. The dumpling itself was simple, a tiger prawn wrapped in thin skin, a good pairing with its sauce.
The sorbet itself was really good, v strong and this the Parma ham goes well and it wasn't weird because frankly you don't taste that much of the ham, just a bit of saltiness
Not bad overall, very good execution, it could easily have been disgusting as a dessert but it's not at all
5 tiny dumplings, skin was thicker than Chinese and has a nice chew. Tiger prawn filling was inconsistent, some were good some were mushy
And the Chinese chili crisp is wayyyy too spicy, esp for a restaurant. Luckily the appetiser came later than the pasta else our taste buds would have been fried before we could taste the pasta.
Balsamic doesn't come thru at all since the chili crisp is so overpowering

Yes the sauce doesn't contain cream. That doesn't make it a proper carbonara. The sauce lacks umami even though the texture is thick. Pancetta? Crisps were crispy but the flavour wasn't infused into the sauce. Plus it's clumpy very quickly
Parma ham was way too salty
And wth that's not linguine man that's way too thin, it's basically spaghetti. At least not the linguine you expect
