Their first failure of a pasta I've had. No idea why they call this their signature pasta when everyone knows their seafood aglio olio is good, maybe the best item they have

Their fusion spaghetti is basically tomato sauce. So there's no good reason why they call it fusion instead of simply tomato sauce.

The sauce lacked character, way too sweet, and only tastes of the Cajun seasoning cos they put too much of it. The measly pieces of seafood didn't help, when there's nothing else like veggie of some kind

Their secret is the masterful use of capsicums to add so much umami to the pastas. It's really extremely deeply flavoured and so complex, not just one dimensional tomato sauce. The beef was tough though.

This impressed me. Their pastas are stellar

Their grilled stuff is a lot more average. Everything on the plate was average

Very, very competent aglio olio in a hawker stall

Big portion, there's umami, and generous amount of seafood. The garlic and chili tastes are not too strong but that's fine, overall it's satisfying enough. I personally liked the load of lettuce given. Also not too oily for an aglio olio

This shop is well known for its wanton noodles, but they always sell out early! So I tried the dumpling noodles ($3) - the thin noodles were bouncy and tossed in black sauce. The dumplings impressed me - thin skin, lots of meat and prawn inside!

Always only had Da Zui Ba’s mlxg via food deliveries and even then, it was usually a great bowl. Finally got to try it freshly fried and it didn’t disappoint!

Think there’s a minimum order of $7, which came up to a huge portion for me for the ingredients I picked. Other than the lotus slices, everything were pretty fresh. Loved that it was very thoroughly fried and bold on its flavour, spice and peppercorns. Even the wide potato noodles that some stalls usually undercook, are done nicely soft and chewy here. Their spice levels are a tad higher than the usuals, so make sure to adjust accordingly!
