King Grouper Fish Soup 石斑王鱼汤 (Balestier)

Founded in April 2022 by Chew Kim Hwee, King Grouper Fish Soup specialises in premium giant grouper fish, prized for its collagen-rich skin and delicate flesh.

While they also offer regular Spanish mackerel fish, the giant grouper fish is the star; only those weighing 10-kilogrammes and above are used. This results in a tender chewy firm texture to their sliced fresh fish and battered fried fish, both with meaty sweet savoury salty flavour.

Their soup is robust with sweet salty savoury herbal flavour, made by simmering giant grouper fish heads, mackerel fish bones, and assorted vegetables for over 3 hours. Garnished with crisp cabbage, juicy tomato, crunchy salted mustard greens, and fresh wispy coriander, lending a vegetal earthy herbal salty sweet flavour.

Further garnished with tender minced pork, which lends meaty sweet savoury flavour and good depth of body to their soup.

The fish is fresh and broth was good. I wouldn’t say excellent but heartwarming for a rainy day and season.
