Inspirasi is a family run stall that inspires long queues the moment it opens for their soto ayam and mee rebus.
The key to a good soto ayam is the soup stock. Unlike other stalls, Inspirasi's soto ayam broth is light, mildly sweet but yet hearty. Inspirasi makes theirs by boiling chicken bones for hours. I usually like my broths stronger but most stalls flavour their broths with MSG which often leave me a scratchy throat after I wolf down their broths. No such issues with Inspirasi.
At $2.50 per bowl, this is a good hearty bowl of mee soto. Perfect for this afternoon's rainy weather!
Easties, drop by Bedok Interchange Hawker Centre for a hearty breakfast of Mee Rebus ($2.50). Expect silky yellow noodles and a hard boiled egg in thick and luscious gravy that is sweet, spicy and nutty all at once. Also good is their robust and tasty Mee Soto with shredded chicken, lots of crunchy beansprouts and coriander. Burppler Veronica Phua recommends adding some of their 'lethal chilli sauce' for an elevated experience. Otherwise, opt for their peppery Chicken Porridge ($2.50) with Begedil ($0.50).

With a reputation that precedes itself, I was looking forward with great excitement to having the Mee Soto at “Inspirasi” again (it’s been many years since my last visit). My order of mixed mee and beehoon was huge, and came with large pieces of shredded chicken, lots of crunchy beansprouts and coriander. Of course I had to add on their famous bergedil (a deliciously seasoned mashed potato patty). Although the broth wasn’t as thick in consistency as I remember it to be (or maybe I’m mistaken), it was very tasty indeed. Especially after I threw in a bit of their lethal chilli sauce.
Highly recommend! Very decent homely dish. Broth is good, chicken is tender :)
