The sea urchin from Hokkaido πŸ‡―πŸ‡΅ was super sweet and creamy and the salmon roe were briny pops of joy. I had this instead of their signature mini chirashi and I think I slightly prefer these great ingredients in sushi form but they're amazing either way πŸ˜‹

Iberico pork loin from πŸ‡ͺπŸ‡Έ is served with some lightly cooked squid πŸ‡―πŸ‡΅ and a fried croquette made from braised pork trotters

The cook on both the pork loin and the braised then fried trotters was perfect. The loin in particular was very succulent with the little fat cap on the top perfectly melty without being greasy. The dish is served with a slightly tart and very rich mustard sauce which was delicious, onion jam as well as a clear pork dashi broth on the side to accompany the dish. A superb pork dish πŸ‘

A good combination of Singaporean flavours with black glutinous rice served alongside frozen durian mousse and fresh coconut ice cream inside a coconut. Its a thoughtful reinterpretation of the classic local Pulot Hitam dish and works very well. The fresh coconut meat scraped off the walls of the fruit and the coconut ice cream are light and sweet, balancing the rich, heavy flavours of durian and the rice. Overall, one of the best desserts I've had at a Chinese restaurant πŸ‘

Unlike other places, the sushi is prepared by slicing extremely thin slivers of fish from a huge block of the tuna belly. The slivers are then piled high and lightly sauced. This makes for an absolutely unctuous bite, even more tender than normal. Spring time is particularly special with the Tuna from Kyushu πŸ‡―πŸ‡΅ having a sweet fragrance and the perfect ammount of fat πŸ˜‹

A jiggly white ball made from buttermilk and German πŸ‡©πŸ‡ͺ gin rests in a pool of lemon verbena gazpacho with a few flower petals for decoration. Cut into the the dessert and a beautiful surprise awaits, with a bright orange sea buckthorn berry sherbet inside. I loved the flavour combination of this refreshing dessert with the floral notes of the gin going very well with the citrusy gazpacho and sorbet. A very strong palate cleanser that will get you ready for heavier desserts after it πŸ˜‹

This is one of their signature variations, simply topped with mozzarella, black truffle and olive oil. It was a little bit oily but the thin crust was perfectly crisp and slightly charred at the bottom yet soft on top. The toppings were also generous and the ratio of cheese was perfect, rich but not too much so that the truffles were still the star. Highly recommended.

This was a splendid Spring 🌱 dish with lots of bright, fresh flavours from the asparagus and the vibrant, green veloute. The sweet, tender langoustine added a luxurious touch and the ikura and mentaiko added salt in a unique briny way. Overall, a very good dish by the amazing @chefkirk_w and definitely a dish worth trying from the current Spring menu πŸ‘

This was an enjoyable and unique dish because it was one of the rare mains where a protein wasn't the focus of the dish, instead the star of the dish was the seasonal black ttruffle. This dish really showcased their nutty flavour fully because the portion of the fungus was incredible. Its hard to tell from the photos but there were around 4-5 layers of generously sliced truffles piled on top of thin layers of mashed potatoes and braised oxtail meat. This was backed up by a deep, flavorful black truffle sauce that complimented the ultra tender oxtail meal and creamy mash. Luxurious, comforting and overall, a very good winter dish πŸ˜‹

This restaurant was not the most impressive overall with a weird layout, Dim lighting and generally solid but unmemorable food. However, with that said, they did serve a pretty good strawberries and cream mille feuille. The pastry layers were a bit harder than ideal but the fresh strawberries and light cream made for a very enjoyable dessert. Also loved the small dots of strawberry compote on the plate.

Chef @ryoichi_sushi_master was my chef for this meal and served these 2 superb blowtorched pieces of sushi

1. Aburi Kamasu - Baby barracuda sushi was beautiful, the quick cooking releasing the fatty oils, making for a sumptuous mouthful
2. Aburi Kinmedai - One of my favourite fishes when prepared in full size dishes, it was superb in sushi form too. The sweet delicate flesh of the fish was complimented by the lightly vinegared rice
