French carrots were cooked sous vide with orange juice before a quick finish in a pan with butter. The carrots were supremely sweet, tender and definitely a great way to get carnivores to eat some veggies

The mashed potatoes or pomme puree was done in the classical Joel Robuchon style with heaps of butter and was smooth and extremely luxurious. @chef_sebastien_lepinoy adds girolle mushrooms for added flavour and it works brilliantly. This is classical French food done to perfection 😋

This classic from the @garibaldisingapore ala carte menu is very enjoyable. The lamb fillet is precisely cooked to medium rare and very tender, the potato gratin is nice and the lamb jus has good flavour. The homemade mint jelly is a touch sweet but also has superb flavour. Overall, a tasty dish 😋

The entire foie is slowly roasted before being finished in a hot pan to give it a nice caramelized crust. This gives it a delightfully wobbly/unctuous center. Pairs perfectly with the sweet cherries. Absolutely delicious 😋

Sweet mixed berries are covered in the slightly boozy and very creamy sabayon made with egg yolks. A homemade pistachio ice cream binds the dish and I think is a good flavour match for berries. A good dish 😋
