Each cuttlefish was pretty thin and crisp, and slightly spicy!
Had some smokey flavours but wouldn't mind it to be even more tender/ melt-in-your-mouth!
A really interesting creation, made with spicy pork ragu, mozzarella, black vinegar reduction.
Felt that the porky flavour might be a little strong, but here you'd get mala pork ragu, black vinegar reduction, sesame sauce, 62 degree egg, pork wontons and peanuts.
This was insanely huge?! Each huge chunk was crispy on the outside, and also quite well-seasoned and flavoured with lemongrass, and ginger straits spiced buttermilk, and the chicken itself was pretty tender too!
Surprised to find that this still remained slightly crispy even after leaving it there for some time, and was actually quite an interesting and unique twist to your usual croquettes!
