It’s like a localised version of mazesoba. Every piece of pork belly is fatty, full of flavour, and incredibly tender.

This bowl of goodness hails from the Hong Lim Market, renowned for its Michelin Bib Gourmand status. Though they were out of meekia and meepok during our visit, we gone for yellow noodles and kway teow. The noodles were delightfully QQ and slurp-worthy.
In the medium-sized bowl, you'll find an array of toppings: four bouncy meatballs, two wantons with smooth skin and flavourful marinated meat, grainy sliced pork, a hint of minced pork, pig liver, pork lard, spring onions, and a crispy dried sole fish. These noodles had no trouble soaking up the special mix sauce, resulting in a flavour explosion in every bite. The sauce, generously provided, gave a unique blend of distinct vinegar taste, lard oil, and chili, giving it a robust flavour profile that's truly slurptisfying.
Don't underestimate the simplicity of the soup either; it's packed with savoury goodness and a rich porky flavour that rounds out the meal nicely.

While the noodles are cooked fresh, it seems the ingredients had their prep time earlier. The sauce boasts a well-balanced mixture, heavy on vinegar, with hints of lard oil and chilli heat for that extra kick. The noodles soak up the sauce nicely, though they didn't quite reach the lip-smacking level.
As for the soup, it was rich in meaty goodness, with a touch of umami from the seaweed addition, it's definitely a standout. I think it will taste better in soup than the dry version.
Honestly, I'm not sure if it's worth enduring an epic queue for this bowl. If you're in a rush, head to their branch at the other end of the same coffeeshop for a quicker fix.

Smooth chewy slurpy noodles mixed with savoury vinegary sauce with an acceptable level of spiciness(optional) comes with Japanese Cha Shu, tasty meatballs, minced meat & liver(I don't eat this) garnished with spring onion & salty fish crisp.
The fusion element you should have known by now is the soft & tender Cha Shu. This is definitely the winner.
The minced meat on itself is dull & plain but once mixed with the sauce, it certainly enhanced.
Otherwise, it's just your usual standard Bak Chor Mee.😐
