Dry noodle, Japanese bak chor mee vibes at first. Springy noodles tangled with spicy minced pork, flavour clinging to every strand. The soft-boiled egg broke apart and turned everything creamy, and suddenly it shifted from bak chor mee to carbonara, rich and indulgent. Seaweed flakes added a savoury lift and extra texture, while spring onion gave freshness and gentle crunch. Each bite had layers of spicy heat, creamy egg, chewy noodles, crisp greens.

And the best part, when the server sees you finishing the mazesoba, they will automatically come over and ask if you want a bowl of rice. Free of charge, the rice mixes into the leftover sauce and turns it into round two. Saucy, spicy, savoury, filling, shiok and belly full to the max.

The ajitama egg was nicely done, yolk jammy and rich, well marinated so the flavour seeped into the whites, giving that perfect bite that lifted the broth.

Free flow iced tea was served by the staff, and service was attentive. They came automatically to refill the cup, cold and refreshing every time, a perfect reset before diving back in.

Torikoku Ramen Special ($19.80++)

Fame Oyster Broth Ramen from Osaka, Japan Now in Singapore!?

I had to check it out! I tried the Slow-Cooked Oyster Broth (Koeru) + Beef Sushi Set (Special) ($24.50+), which included a bowl of ramen and two pieces of beef sushi.

The hand-kneaded, slurpy, chewy, thick, and flat noodles were served in a rich, umami-packed oyster broth. This oyster broth was a creamy blend of oyster sauce, pork, and chicken, delivering a distinct brininess and sweetness unique to oysters. The special set came with three pieces of thick-cut, fatty, melt-in-your-mouth yet meaty cha siu, reportedly made using a French meat-curing technique to achieve its delicate taste and texture. The set also included a whole jammy marinated egg, said to be smoked with white oak for a slightly sweet and smoky flavour. Alongside, there were two pieces of seaweed, bamboo shoots, a slice of sudachi, diced onions, and one oyster.

The beef sushi was silky, smooth, and flavorful. Using simple seasoning like salt and pepper combined with broiling techniques, they achieved an exceptional taste and texture. Oishii!

Creamilicious, rich and deep collagen-rich broth made from using premium black pork bone and trotter. The natural umami flavours were further strengthen by Hokkaido sea kelp and shiitake mushrooms. A special tare seasoning sauce was added just before serving to enchant the savoury broth.

Hearty, fragrant and light although its salt-based. Delicate broth made from a blend of seafood, bottarga sauce, Mongolian rock salt, Okinawa sea salt, and white truffle oil. Topped with a slice of grapefruit for a light refreshing twist.

A lighter version of that Shoyu Soba. Cleaner and clearer.

Oceanic rich bowl of chewy noodles, garnished with char siu, leek, crab meat in tomato paste, sour cream, and dried oregano. Wanted to top up for Japanese snow crab but they sold out so can only have a taste of their umami crustacean broth.

A ramen that warms the soul and reconnect to nature.😌🌳
Soft slurpy noodles in a bowl of hearty and savoury soup made from Hamaguri clams, pork bone and Japanese broth. Comes with succulent cha shu, topped with housemade porcini duxelles and a drizzle of aromatic white truffle oil.
Simple, clear, earthy, rich and tasty. Broth was great. Truffle was subtle but mushroom note was prominent.

Quality smooth, creamy and rich tasty collagen broth ramen flavoured with shoyu, kelp, sea salt and a good layer of special homemade oil. Topped with black fungus, ajitama, cha siu, seaweed and negi.
Noodles were slurping good, can taste the egginess within each strand of it and had nice chewy consistency. Wonder which brand they brought from. It was good.
Broth was great and can taste the rich creaminess within it. Its said to have use a unique blend of different pork bones to create this fabulous flavourful broth.
Cha siu was chewy, tender and flavoursome. The fats wasn't fatty when bite but rather had a chewy aspect too.🤔
Ajitama was normal tho, if could have a stronger marination will be great. That's for me but I guess the broth can make up for it.
