Ramen

Well, Ramen deserves its own list

It was clear broth, with popular thin yellow noodles. I didn’t know what to expect for my first yuzu ramen.

But this was enjoyable clear Chicken Broth, with yuzu that LINGERS refreshingly
Although noodles went limp quite quickly, depressing overall mouthfeel, the soup was great! For those feeling under the weather, it will be a comforting dish easy to stomach

Egg was really en pointe too. Haha check out that yolk!

It’s duck-based broth. Unique to Tsuta Singapore. I gave it a try; apprehensive for a first time duck ramen taste test.

Fears were proven by the poopy, gamey whiff of Duck each bite screams of.

It’s difficult to pinpoint but I feel like duck if handled roughly, can smell like its waste produce 🙈 perhaps the fat in it or intestinal waste gives off such a smell. Through the bowl, I started thanking the sweet sharp raw onions that helped to refresh that odour.

Broth aside, ajitama was yummy, duck meat itself was mostly flavourless and lightly sweet.
Wanton was aaallright. Peppery and insignificantly forgettable. Noodles easily went limp too.

Michelin-starred places SOMETIMES just makes missing the mark one tad too regretful.

Kudos to the warm and attentive service staff nonetheless :)

from Aijisai Ramen 🍜

• Springy noodles ; good bite ✔️
• Crunchy Juicy Shoots ✔️
• Spicy Sprout salad (free flow) ✔️
• Vibrant Ramen Ware ✔️

The soup was fairly fragrant and reminiscent of the the more commonly understood umami tonkotsu broth, but also not quite there in flavour or creaminess. Also found it pretty oily for the lack of flavour that I would have expected from a portion of pork fat in my soup. 6/10 broth.

But can I just say, that little pink baguette piece is absolutely adorable.

With all its saves, I’d rate this a 7.5/10!

It was Ikkousha day on JPassport, bringing this to $9.40 taxes included.
First had this years back when they were still with Ramen Champion. Ordered Hard noodles with Light soup broth.

Ikkousha’s noodles somehow get soggy real quick and I’ll recommend ordering Hard or Very Hard. Even Hard got wimpy 10minutes into the meal.

For folks who love the rich umami flavours, this will be a bowl of perfectly textured tonkotsu love for you 😍 (creamy but not overly cloying to palate)

I also found a perfect combination of light soup base to douse the spicy pickled mustard greens and garlic in to really up your ramen game! (P.S. normal soup might just get too salty 2/3 of the meal through)

Eggs wise: a little disappointing to not be able to find the run in the ajitama yolk!
AND, we were only given 2 free hard boiled eggs per person.. 😱😭

+ I sure like striping kewpie mayonnaise over my hard boiled eggs as like their commonly compared ramen counterpart (Keisuke) would provide for their customers.
