A dish served at the inauguration of the temple of the Emerald Buddha in the year 1809 King Rama I. What I adore about Paste is that Chef Bee Satongun capitalises old Thai family recipes between 1870 and 1930, dishes that are rarely been seen today or almost extinct, and elevate it with creativity and a flare that’s almost art like, whilst maintaining and respecting the authenticity. .

The delicate balance of sweet, sour, spicy and savoury is well known in Thai cuisine, but Chef Bee took it a step further with this dish. Cold yet impactful, the starter was truly a perfect party piece that awakens your palate for more exciting things to come. The title of Best Female Chef in Asia was very well deserved.

ACAMASEATS & TIPS💮: Jyou una jyu Large (💴¥4,200/💵S$52) Edomae Unagi, using only carefully selected fresh eel caught daily, cooked slowly over a charcoal flame until fluffy & for something extra, try their steamed unagi. The refreshing kimosui is made with katsuo stock. 🤤

If you are able to get a seat, just go all out with their course meals. The recommendation will be Course A (💴¥3,900/💵S$48) If you are feeling adventurous & generous go for Course D that will set you back (💴¥9,600/💵S$120) 🖖🏻

ACAMASEATS & GTK💮: Spaghetti aglio olio cooked mildly spicy alongside lobster bisque, topped with sous vide quail egg & covered in seafood foam. Tempura cooked Prawn for an extra crunch. This alone is enough for me to head back to L'Atelier de Joël Robuchon for a full blown Degustation. Or maybe even the main Joël Robuchon Restaurant. 🤤

It's not spectacular, it's not a ramen I'll crave, it's not a ramen I'll go back for (only the one in Tokyo) The Soba was alright (could be harder), the Shoyu isn't mind blowing even it's enhanced with a touch of Truffle. But the Char Siu was not bad & the flavoured egg was good, well that's the best, nothing's better than an Onsen egg, the best invention in the culinary world oh you beauty. 😍

ACAMASTIPS💮: Looks like I have to head to Tokyo for the one that actually earned the Michelin Star. The Tokyo outlet actually braised their Char Siu in red wine, the Soba is a mix of 3 kinds of flour & you better get in line, otherwise it's momofoku you Starlight. 🖖🏻
