The owner used red fermented bean curd, 南乳 to braised the trotter. It helped to remove the porky smell and gave this dish a depth of flavors. The tendon and meat were so tender that I hardly need to bite.
If you are afraid of the alkaline smell in the noodle, just ask for a bit of vinegar or eat the bee hoon instead. .

It was a must eat in Hong Kong. However, it was very hard to find good ones in Singapore. Chef Cheung used Chinese five spices and herbs in the braising sauce. Not only to add extra flavors to the meat and also helped to break down the rough and tough part of meat. .

I would prefer a whole chunk of beef brisket but he gave me the broken pieces. Some might not like the strong alkaline smell, so I advised you to add abit of vinegar to neutralize the smell and taste. .

The chef perfected his braising sauce over the years by adjusting the different ratio of the spices and herb. He skillfully used the Chinese herb like Angelica Sinensis, 当归 to improve the natural sweetness of the sauce rather than just adding sugar.
One of the reason why I love his soy sauce chicken was that his braising sauce had this fruitiness and flowery aroma. ☺️☺️☺️
When the wok was heated to extremely heat, it caused something called the "wok hei". This wok hei helped to remove most of the gamey taste and not losing any the meat natural sweetness. Stir fried with ginger and spring onions improved also its sweetness. To achieve such perfect texture of the liver takes years of practice (I mean yearsssssss of hard work and the ability to endure the heat of the burning stove.) According to the auntie, they have no actual closing time. When they sold out, they closed. So do drop by early!

They served seriously good braised pork and the "dark" meat. We ordered almost their entire menu and it costed us less than 100RM. No trace of the porky smell but the entire shop was filled with the aromatic braising liquid.
Just by watching the pork slowly simmering in the braising liquid got me so excited. No time to take picture. Take one shoot and Eat more.

High recommended by my Dad. Even though they are a fish ball noodle stall, their meatballs are much better.

A big bowl of soup is the best food for a rainy night. They fried the fish head to remove its fishy-ness and helps to add a layer of fragrant.
The base of the soup was made with a combination of fish and pork bones and a little of ginger and spring onions. However, the soup didn't taste totally nature.
The last time I ate, they gave much more fish head but this time it is much lesser. But still it is worth a try.
