Dry Ramen

Because tom yam soup with deep-fried fish slices is everything.

Silky strands of hand-made noodles tossed in a heady mix of chilli paste, pork lard, and lots of vinegar, then topped with deep-fried wantan, minced pork and Fuzhou-style fish balls.
