Superbly balanced concoction comprising sweet, tangy and umami umeshu as base, with the slightest hint of bitterness from the shiso liqueur and Cointreau plus a burst of freshness from the lemon juice. Loved the delicate floral and herbaceous hints too.
Good to know: Only the first little bowl of nuts is complimentary. So don't be surprised to see a $5 charge appear in your bill if you ask for a refill. 😅The bartender unfortunately forgot to inform us beforehand; thankfully we were in high spirits (and he was quite apologetic about it) so we just laughed it off.

Unlike the more well-lit and food-centric Izy, it's all about sultry darkness and cosy corners in Caché. The bar manager, Shinya Koba, is Japanese and moustached, which are virtually automatic proofs of excellence and legitimacy. His Aged Negroni packs a potent wallop of a kick, all musky and confident...yet it goes down with a smoothness superior to a baby seal's buttocks.
