Ajisai ramen at hokkaido marche. Overall not too bad, broth was sweet and not too salty. Cha shu was a bit too hard though. 50% off with jpassport till end of month. Value for money!

One of my favourite food courts in Singapore is Hokkaido Marche at the basement of Orchard Central because it houses everything Japanese. It’s always hard to choose what to eat and it’s not necessarily a bad thing.
I was drawn by the sheer vibrancy of these yellow noodles and how customers slurp them up with little resistance. I ordered the Hakodate Chashumen ($15) which comes with more slices of tender chashu. The star however, is still the noodle. Soaked in that tasty clear broth, the QQ noodles really are a treat.
Famous for the shio base, their broth is much lighter in flavour, so if you like bolder flavour, opt for the spicy one or add the chilli from the condiment station. It came with quite generous amount of menma (bamboo shoots) and some charsiew and egg. Noodle was hard, which something I like.
Soup is light and not oily but overpowered by the taste of bamboo shoots and bean sprouts.

Ajisai is one of the stalls located inside Hokkaido Marche. Don't confuse the dining concept with the non-Japanese Marche that we all know & grew up with. While it's free-seating in this space, the tables belong to specific stalls you can't mix & match food from different ones.
Thankfully as I dined alone, this wasn't a problem for me. You also pay immediately when you order, not when you leave the premises.
So this Hakodate Chashumen ($15)... The chashus were quite fatty, but as they were thinly sliced, I decided not to peel the fats away & let them melt in my mouth. The ramen is of a thicker variant than what I am used to, but still very Q & bouncy so no complaints there.
The broth is light & refreshing, slightly sweet & not too salty. Which is right up my alley as I don't like salty things. Even though I myself am mostly salty AF.
