This dish is inspired by the local orh nee dessert, using three types of yam - sato imo, local yam, mountain yam - to create the hot espuma that forms the foundation of this dish.

Sweet corn ice cream rests on a bed of crab jelly and fresh pear, with chips on the side made from popcorn seeds for texture. These flavours brings the attention to the rich flavour of the Amur caviar.

Smoking. Modern Asian takes the form of a crepe dumpling filled with diced foie gras, before being smoked with applewood and presented tableside. The foie gras within is the type of foie gras that I liked, one which is more luscious and buttery. This is at Cicada, a multi-concept eatery at Clarke Quay.

These are my top two pastries from Goodwood Park Hotel’s Durian Fiesta, ongoing from now till 26 July 2020.

The cover photo shows their durian puffs, where swirls of D24 durian mousse is sandwiched between fluffy choux puffs. It's an affordable and decadent treat. With D24 durian this good, you won't miss MSW, until you caved in and order their other delectable MSW treats.

The second photo features their coffee petit cake, which is part of a larger D24 Party Squares consisting of 16 petit cakes with four popular flavours - D24 durian mousse with cream cheese, pandan coconut, coffee, or chocolate marquise. The coffee flavoured one pictured is like a durian tiramisu, with bitterness of coffee complementing the sweetness of durian perfectly.

Back at Gyu Bar with their owner @thetravellingcow, and we had wagyu with yolk in a stone pot. That's lots of premium well-marbled A4 wagyu grilled over binchotan, served with rice that was cooked in the stone pot. It's like comfort food, but done the best way possible.

For a simple lunch that won't break the bank, consider Teochew Paradise $38 menu consisting of:
1. Teochew-style Braised Duo Combination - Braised duck, with braised egg and braised tofu
2. Crab Meat with Fish Maw Broth
3. Steamed Cod Fillet with Garlic and Beancurd Skin
5. Hokkien-style Fried Rice with Abalone

I may have tried many foie gras, but this is definitely the first time I had it with such flavours. It's experimental, but resulted in a mix of flavours which I enjoyed.

This foie gras us pan-seared, then served atop a bed of Chinese glutinous rice with a creamy sauce balanced by tang. That blend of flavour was rich but refreshingly balanced. To top it off, this foie gras had a dramatic entrance as it came smoked.

This is at Lè Fusion near Singapore River, a chic restaurant and bar where you can experience innovative cuisine dined in a leisure and relaxed setting. Food is refreshingly unique, with contemporary take and a unique twist of ingredients.

Not your usual salad. Besides quinoa, avocado and kale leaves tossed in a balsamic dressing, this was served with lobster tail and claws. And it's fresh, live lobster, which was still swimming in the tanks at the outlet at Raffles Hotel.

I very much wish to have these meals onboard Singapore Airlines again, but we need to stay safe, and comply with all the COVID-19 measures in place by various governments. I just hope the airlines can tide through these difficult periods.

They're not just badly hit by the drop in travel volume, but also from declining oil prices as most airlines would have hedged their fuel demand by purchasing oil forwards, and these would incur more losses due to the fall in oil prices.

Another evening at Mag's Wine Kitchen, which serves modern French cooking with the restaurant's signature home-style ambience and hospitality by Chef-Owner Magdalene Tang. It was first established in Circular Road back in 1996, but has relocated to its new location in the thriving precinct of Keong Saik Road.

The dining experience is meant to make you feel at home. You can see that through the genuine and guest-first hospitality - from the modern French dishes that narrate Mag's personal culinary journey, down to the diverse wine list that includes favourites from her personal collection.
