Made a #dumplings #noodles #soup #水饺 面汤 for #breakkie this morning !! Done up in less than 30mins ! Of course, dumplings are prepared way b4 and frozen. 😁
#Recipe (serves 1): For the soup:
600ml water
2 1/2 tsp chicken concentrate*
1/2 tsp hondashi**
1 tsp shallot oil
Dash of pepper
1 serving of wonton noodles
3-4 slices fishcake (optional)
3-4 pcs dumplings
Some green vege
For the dumplings (able to make approx 20 pcs, balance can be frozen for future use):
200g minced meat
130g minced prawn meat
2 tbsp light soy sauce
2 tbsp shaoxing wine
20 pcs water chestnuts, diced
3 stalks of spring onions, diced
15-20 pcs of dumplings skin
1 tbsp sugar
1 tsp garlic powder
1 tsp onion powder
½ tsp pepper
2 tsp corn flour
1 tsp sesame oil
Method:
1) Add water to pot and cook till boils. Add shallot oil and blanch green vege. Remove green vege once done.
2) Add chicken concentrate, hondashi and pepper.
3) Add in wonton noodles and cook for approx 2-3mins until softened.
4) Drain noodles and place in bowl of ice water briefly. Drain and set aside.
5) Cook dumplings and fishcakes. Remove from flame once done. Add the soup and dumplings to the noodles with the green vege. Tuck in !! *can be replaced with ready chicken stock + water.
**hondashi can be purchased from jap supermarket.

#Recipe (serves 1):
1 serving of vermicelli, rinsed
500ml water
1 tbsp ikan bilis, rinsed
100g slices fish (marinate w some shaoxing wine, salt, pepper, sesame oil and 1/2 tsp corn flour)
7-8 thin slices of bittergourd (marinate w some salt and rinse before use)
1/2 tomato, wedged
5 slices of carrot
3 slices of ginger
1/2 tsp preserved vege (冬菜)
1/4 tsp dried sole fish powder
1/2 tbsp shaoxing wine
Some fishcake (optional)
Some salt and pepper to taste
Method:
1) Add the ikan bilis to a soup stock bag. Add to water with carrots, ginger slices and preserved vege.
2) Cook for 10 mins before removing the soup stock bag and ginger slices.
3) Add the vermicelli and cook till soft. Drain and place in a bowl.
4) Add the fish slices, tomato, bittergourd, fishcakes to the soup.
5) Add shaoxing wine, salt and pepper to taste and dried sole fish powder.
6) Remove from flame and pour soup into vermicelli bowl. Garnish w coriander and serve w chilli padi and tuck in !!
Used it to cook a chicken #porridge and added some #abalone slices to it. So it becomes a legitimate Abalone chicken porridge 鲍鱼鸡粥。😂

Steamed Chicken w Shiitake mushrooms & Dried Tangerine Peel

#Recipe (serves 2):
2 whole chicken legs
4 dried shiitake mushrooms
5g dried tangerine peel (can be purchased from chinese medical halls)
1 tbsp ginger shreds
1/2 tbsp corn starch
Marinade:
1 tbsp light soya sauce
1 tbsp glutinuous rice wine (i replace w shaoxing wine)
1/2 tsp salt
1/4 tsp pepper
1 tsp sugar
1 tsp sesame oil
2 tsp dark soy sauce
Method:
1. Cut whole chicken legs into pieces. Mix w marinade and set aside.
2. Soak shiitake mushrooms to soften, remove stalks and sliced.
3. Soak dried tangerine peel, scrape off white pith, rinse and chop.
4. Arrange chicken pieces, mushrooms and dried tangerine peel on a steaming plate. Sprinkle ginger shreds on top.
5. Steam over high heat for 8 minutes. (As my chicken pcs arw bigger, so I steam mine for 15mins.)

So here comes the one for the dry version. Basically not much diff. 😁
#Recipe (serves 1):
1 serving kway teow noodles
3/4 tbsp chilli oil
1 tsp shallot oil
1/2 light soya sauce
1/4 tsp dark soya sauce
1/4 tsp sesame oil
2 tbsp of the prawn soup

Just toss all the seasoning together with the noodles, served w blanched greens and grilled seafood and tuck in ! .
