Made a quick sandwich of tuna mayo, sweet corns and crunchy cucumbers for breakkie. Happy Friday eve !!

Ingredients :
150ml cooking oil
100g shallots, chopped
4 tbsp minced garlic
500g pork belly, diced
50g pork skin, removed fats and diced (optional)
1 litre water
3 tbsp mirin
3-4 eggs

For the Seasoning:
60ml light soy sauce
2 tbsp dark soy sauce
½ tsp pepper
½ tsp garlic powder
4 tsp sugar

Instructions:
1. Heat up the oil in a deep frying pan or wok and add the chopped shallots and minced garlic. Stir fried till light golden brown. Dish up, drain and set aside.

2. Remove the oil but using the same pan/wok, add the diced pork belly. Stir fried till all has changed color from pinkish to cooked.

3. Add in the pork skin, if using and stir to mix well. Add in all the seasoning and stir till well combined and aromatic.

4. Add in the water, mirin and the fried shallots and minced garlic from Step 1. Bring the mixture to boil.

5. Reduce heat to low after the mixture has boiled and allow it to simmer for a further 1 hour.

6. Taste and add more water if necessary and simmer longer.

7. Prepare the Lava eggs : Bring water to a boil in a pot. Switch to low heat after water has boiled. Add the eggs and allow it to cook for approximately 6 minutes.

8. Remove the eggs and place them in a bowl of ice water to cool.

9. Peel off the egg shell carefully and cut into halves. Serve the braised pork with rice, some blanched vegetables and the lava eggs.

Unlike the traditional pyramid shaped dumplings, their signature #HongKong style rice dumpling #香港 裹蒸粽 ($32.80) is shaped like a rectangular golden pillow. It's really so big that I am actually using a 9 inch bamboo basket to steam it. 😂
The dumpling contains a generous amount of premium goodies such as whole #abalone, roasted #duck, roasted pork, dried #scallops, mushrooms, salted egg yolk and #chestnuts ! I liked it because as you can see, there's more 料 than the rice itself. Which makes it very value for money la!
That's also my fav kee zhang with red bean filling 碱水粽 ($6.80) that l I loved to dunk it in sugar and eating it together.
Notice the brilliant sticky golden rice of the kee zhang. The premium #glutinuous rice are treated with lye water which gives them a golden yellow and the core stuffed w yummy #redbean paste.

Tip to cooking a good economical fried #beehoon : use only chopsticks to stir the vermicelli, no spatula !
#Recipe:
One serving of bee hoon
1 tsp minced garlic
A handful of beansprouts
1 tbsp oil
150ml water
Some diced spring onion (for serving)

Seasoning:
1 tbsp light soya sauce
1 tsp dark soya sauce
1 tsp sugar
3/4 tbsp oyster sauce
1/4 tsp salt
Pinch of peppep
A little fish sauce

Method:
1) soak vermicelli for 10mins and drain.
2) add oil to a pan and stir fried minced garlic until fragrant.
3) add the vermicelli followed by the water and all the seasoning except fish sauce.
4) use chopsticks and stir to mix well.
5) when water is reduced, add beansprouts. Mix well.
6) when vermicelli is almost dried, off flame and garnish w diced spring onion. Tuck in !

Many has been asking about the #sandwich maker which I've been using. So maybe I shall elaborate abit more here. It's a Japan brand by @recolte_official . Mine is a 2-pin export set that was bought from Korea sometime back so I would need to use an intl adaptor to connect to use.

But.... the good news is, I just learnt that @recoltesg is coming to Sg next month ! So u can be expecting to see these sandwich makers + other #kitchen #appliances under the same brand, which comes suited with local 3 pin plug and warranty, selling in our local market and even in our neighbouring countries like msia and thailand.
So feel free to ask me anything if you would like to know more about these machines, and I would be glad to share all that I know!
