#Recipe #ι£θ°± :
4-5 pcs large prawns
1 squid, scored on the underside, sliced and blanched in boiling water
1/2 onion, thinly sliced
1 tbsp minced garlic
2 tbsp cooking oil
1 tbsp sambal chilli sauce
1 tsp sugar
2 tbsp water
Method:
1) Heat up oil and saute garlic and sliced onions until onions turn tender.
2) Add sambal chilli followed by water.
3) Add sugar.
4) Add seafood and mix well.
5) Stir fried till all seafood cooked and remove from flame. Serve.
There is the must have Fermented black beans w minced meat, cai po (preserved turnip) egg and a stir fried xiao bai cai vege.
The fermented black beans w minced meat is a super nice dish to go along w plain congee especially with the sauce.
So here's a little video clip w recipe to share !
Recipe ι£θ°± :
75g minced meat
1 tbsp oil
1 tbsp fermented black beans
1 tsp minced garlic
1 tsp minced ginger
1 chilli padi, diced
1 1/2 tsp dark soya sauce
60ml water
Some diced spring onion
Method:
1) Add oil to a pan and stir fried the minces garlic, ginger, chilli padi and fermented black beans until fragrant.
2) Add the minced meat and stir fried till the meat is no longer pink.
3) Ade water and dark soya sauce.
4) Continue to stir and break up the larger lumps of meat till the meat has absorbed the sauce and turns darker in color.
5) Add diced spring onion and off flame. Serve.
I think my ζ more than the rice as usual !! π

1/2 cup rice
1 tbsp mushroom oyster sauce
1/2 tsp light soya sauce
1/4 tsp dark soya sauce
1/2 tsp sugar
1 tbsp shallot oil
Pinches of pepper
Water used to soak dry shiitake mushrooms
3-4 pcs dry shiitake mushrooms
Some sliced carrots
Some sliced roast pork
1/2 of a small cabbage, sliced coarsely
For Garnish:
Some parsley
Some fried shallots
Method:
1) Combine rice, mushroom water, all the seasoning, mushroom, carrots and roast pork into rice cooker pot.
Note: amount of mushroom water + all seasoning together should be slightly below the water mark for the amount of rice used
2) Add the cabbage.
3) Set rice cooker on normal plain rice mode (no quick mode!)
4) When done, stir briefly to mix well.
5) Garnish as desired and serve !
But made a "mcsandwich" instead. π

I usually beat the egg into the rice prior to cooking so that it breaks up the overnight rice grains and also enable every grain to be coated well with the egg, hence you get the golden egg colour easily.

Recipe ι£θ°± :
1-2 servings of overnight rice
2 eggs, to be beaten into the rice prior to cooking
1 tbsp minced garlic
2 tbsp cooking oil
Best to use Salt to taste (and not light soya sauce to retain the golden egg color) and pinches of pepper
Method:
1) Saute minced garlic till fragrant.
2) Add in egg with rice. Stir fried till egg almost cooked.
3) Add salt and pepper to taste.
4) Add diced spring onion and off flame. Serve.

- slice it thinly
- season w lots of salt before rinsing away
Dinner was a quick one w #ε€θι₯ with pre-cooked #braised #meat heated up and serve with soft centre #eggs. Simple and yummy !!
