I usually beat the egg into the rice prior to cooking so that it breaks up the overnight rice grains and also enable every grain to be coated well with the egg, hence you get the golden egg colour easily.

Recipe 食谱 :
1-2 servings of overnight rice
2 eggs, to be beaten into the rice prior to cooking
1 tbsp minced garlic
2 tbsp cooking oil
Best to use Salt to taste (and not light soya sauce to retain the golden egg color) and pinches of pepper
Method:
1) Saute minced garlic till fragrant.
2) Add in egg with rice. Stir fried till egg almost cooked.
3) Add salt and pepper to taste.
4) Add diced spring onion and off flame. Serve.
