To celebrate the last day of the year, I made unorthodoxy Kong Bak Bao. Why unorthodoxy? Because the pork belly is made Japanese-style ala buta no kakuni in a ziplock bag, sous-vide for 12hours.
The meat is tender, flavourful and almost melts in your mouth. The quick homemade pickle added acidity to cut through the oiliness of the pork.

The trick to getting a nice crispy crust on your fried chicken and still have juicy tender meat is to double fry it - once on a lower temperature and again on a higher temperature.
Never knew how delicious deep-fried brinjal in batter can be. I just love the creamy soft texture of the brinjal beneath a crispy crust. Although I felt the nacho cheese was abit of an overkill.
Definitely a far cry from my last experience at this cafe. 10/10 will visit again for their sweets which were equally delicious as well.
Looking forward to the day they start delivering to Raffles Place.
Will definitely visit Botanica again because it's quite a chill place and the food is pretty decent too.

I got the Tonkatsu right, next step is to make proper eggs instead of scrambled eggs 🤣
