You see the whole head and eyes. 👀 I can’t quite describe the texture. Slippery thin ribbons of aquatic crunch? It’s definitely worth trying once, no matter how squeamish you are. Personally I would prefer to let them grow to full size before I enjoy them but this was pretty eye-opening. .

The courses are beautiful and elegant, like a casual kaiseki. Chef Kenji Okumura is classically trained and brings out the delicate best in seasonal ingredients.
Here we have the sashimi course featuring Otoro, hamachi, tako and underneath the golden bird there’s sawara, kinmedai and uni wrapped in hirame. The set comes with three dipping sauces.
The ponzu goes well with white fish. .
