breakfast should be char siew and yellow noodles like forever. also, it likely can be your breakfast only because the decades old 肥肥's self roasted char siew is only ready like 10.30 but they can sell out as fast as a hour half, yes that fast! but first, brave the queue for at least 30 minutes before you see slices of that heavenly char siew from the collective bowl drop onto your plate of super q noodles. most slices come fatty ready but i usually still try my luck for 半肥瘦带黑 (fatty lean with slight char) - you know stuff that your heart will scream further in protest? i choose to please the soul not the body temple.
so i've been hunting down this stall like forever? once i had them in jb but it wasn't spectacular. then at batok but it was not them at all! so "heart grey one cold" and procrastination took over.. till now. one mouth and i realised i have not been living. .
quite sure they sell skin, not meat though. i mean, omggg the roast pork skin is just unlike any?! it has this finessed crustiness from the first bite to end, almost soot like for the lack of better word (but in a good sense). char siew cuts are huge on this visit, fatty major but the little caramelised skin on it already outdoes it. needless to say that shimmering roast duck skin is equally outstanding, almost coming with a crisp and crack. boy, delayed gratification never felt so good!
da heart suffered a bit today. what you want is that good ratio of fats in translucent white to meat. then that thick coating that is almost tar like and you know you have a clear winner. fatty leong will not disappoint.
when in marsling, eat this. and always remember to ask for "半肥瘦" for your char siew. is like 50/50 fats and meat. but thats just half the order won. victory is only yours when they really "browse" through their stock to find you your cut. funny why one is happy when you further dealt your body with ill damage when you find charred bits on your meat.
here for the amazeballs molten black gold again. asked if sauce was too heavy-handed today when i saw bro took the char siew and cut into two servings on his plate. to which he flatly reply me with a stare, "because you never order enough". hahaahaha.

because dad recommends. seeing the big charcoal fired cauldron inside the stall, all stakes are raised. good recommendation dad! good fat meat ratio and sio bak has good crackling sound. char siew was well marinated and came adequately fatty as requested with charred edge for that burst of smokiness but not burnt bitter. and the "lor" was spot on! i took it like a soup. it was that well balance in taste and texture with slight herby touch! and 3 bucks only! just like johorkaki said, prolly bukit batok's best kept secret! they have been roasting for over 40 years!
so say the legendary 秘制肥婆黑叉烧. this refine plate of char siew's meat to fat ratio was well balanced to please either the lean meat or the fatty meat lovers. i would prefer more fat so texture was tad tough to me. a bit too polished taste for me too cause the charred smoky flavor was not intense enough. but then am nitpicking.
prolly the only one time i welcome you to the deep tuas - suckling pig platter. easily restaurant quality i say. the crackling inside your mouth may cause damage to your eardrums. you've been warned. and that's no oil there btw, is sweet honey drizzled over the perfect roast. eat and you may have my permission to die.
relationship goals: eat 九江 with dad. checked. double the pleasure when uncle really bestow you a good cut of 半肥瘦 char siew when you request for it. and dont worry bout the roast pork, is always THAT good by default
when you have to q half an hour for this plate, you make sure you ask everyone at the table to order it as well. this way, the waiting is more forgiving. enough said, time to savor every single bit on this perfect plate - every strand of the noodles, the char siew, the remnants of sauce on your plate after everything.
you see that, you see that? thats what i'm talking about - that caramelized burnt ends and almost transparent fat. if you sin, you sin the full works, no in-between. then pray hard that the hot green tea later works miracles.
