Pictured here is the passion cafe liégeois—passion fruit and lemon verbena forms a sacred union that brings out flavors of red berry. A scoop of coffee ice cream adds a smooth creamy texture to the drink!

Our first dish at Savour 2014 (and also the finest): 55' organic egg by Chef Julien Royer of #17 Asia's 50 Best Restaurants JAAN. The combination of smoked potato, chorizo Iberico and buckwheat added a beautiful salted crunch to the dish, wrapped in a soft boiled organic (or rather, as we like to call it, orgasmic) egg that melts in the mouth.
Miso braised short rib ($10) by Chef Moon of Mikuni: Braised in miso for 72 hours, it's no wonder this cube of beef is incredibly tender and succulent. Kyoto onion and a dash of fresh wasabi added a kick of spice to round up a mouthful of goodness.
Lap Mei Fan ($12) by 3 Michelin Stars Chef Alvin Leung of Bo Innovation, consisting of foie gras, rosé wine and crispy rice. We found the flavors odd, with sour and salty notes of rosé wine in this cold dish, served with crunchy rice crisps.
We also tried the umami ($18) by Chef Alvin Leung of Bo Innovation—black truffle, toro, rice noodle, vermicelli and dry shrimp powder. While we found the vermicelli too dry for our liking, the umami flavors was brought out in the salmon topped with generous servings of black truffle.
Last on our list was the handmade hotdog José ($12) by Bubbledogs, a gourmet hotdog-champagne pairing concept in the UK by Chef James Knappett. While there’s no grower champagne offered here (at least we didn’t see any), the José consisted of a pork hotdog with fresh tomato salsa, guacamole, sour cream and pickled japalenos. We’re not going to say, “a hotdog is a hotdog—how good can it be?” because we’ve tried some pretty epic ones over at @themustardincident. Unfortunately, we weren’t particularly wowed by this creation, much preferring the duck sausage hotdog over at TMI.
