From the popular gourmet hotdog and champagne pairing outfit in the UK, Bubbledogs, comes this crackly-skinned pork sausage with sour cream, guacamole, tomato salsa and pickled jalapeño between plush buns. Other than the surprisingly light texture of the garnishes, I wasn't too wowed by this.
If you're at Savour, skip this queer combination of foie gras, crispy rice and rose wine, which tasted more like sour cream with salty Rice Krispies, earthy beetroot and an aftertaste of alcohol that threw me off.
Another of chef Alvin Leung's creations, consisting of vermicelli perfumed with black truffle and dried shrimp powder - reminded me of dry mee siam and tasted kinda underwhelming. But the saving grace was the gorgeous slab of toro (tuna belly) that melted in the mouth like butter.
No, they're not egg yolks, they're three Michelin-starred chef Alvin Leung's take on the classic Chinese xiao long bao (steamed pork dumplings filled with soup): thickened pork stock bathed in algin to form a delicate gelatin-like casing that promptly bursts in the mouth to release a viscous flood of rich porky broth. Mmmm...
"Eat in one mouthful," insisted Chef Moon Kyung-Soo. So I did. Love him for insisting because that's the only way to appreciate all the heavenly flavours packed in that one cube, yet miffed because all that goodness had to be savoured in one fleeting bite.
It's no wonder that the beef is so tender after being braised for three whole days - crisp onion wisps and a dab of wasabi add subtle hints of spice. A must-try if you're heading down to Savour this weekend!
Finally got to try this spectacular creation involving a melty smoked egg flecked with chewy chorizo Iberico, smoked potato balls, buckwheat puffs and crispy chips. What's the hotline for Jaan? I need to make a reservation...
