Bought a Victoria sponge cake before Christmas and it was completely wiped out in just two days! Tried to rush back for another one… but it was already sold out before Christmas Eve. 😅

Thankfully, I managed to grab hold of these mini versions — with the same luscious, generous layer of buttercream and strawberry jam, soft buttery sponge and a light dusting of icing sugar on top. Just as delicious, just a little smaller (and arguably cuter). 😘
