I've never tried duck omelette and this rendition did not disappoint. Generous amounts of smoked duck (lots of fragrant duck flavour!), chopped bell peppers folded into the omelette, topped with fresh tomato salsa, with a side of sourdough bread, smashed potatoes, onion jam, cherry tomatoes and a dash of balsamic vinegar •
