Botan Ebi + pickled mackerel + Sword Fish Belly +Apple cured Salmom + Ikuura ($36)

Beautifully played, stunning take on the Japanese raw meat, but I'm not sure about the pricing.
My Favourite is probably the Apple cured salmon (delectably yummy, with a obvious hint of smoked Apple wood, but not overpowering) and the swordfish belly (nothing can go wrong with bellies). The mackerel isn't my favourite, slightly too fishy for my liking.
