the Nashville Chicken Burger ($15+) from @meatsmith_sg. after seeing howlin’ rays on youtube, I have had a craving for a good fried chicken sandwich in Singapore. not that I don’t like the mcspicy or the zinger, but i wanted to see what the hype over nashville hot chicken is all about.
the burger looks small on first glance, a palm sized brioche bun struggling to contain fried chicken that spills out the sides. it is dressed with a creamy mayo-based sauce and another spicy chipotle-based dressing, topped with refreshing slaw and finished with a few pickle slices.
however, the burger proved to be a substantial treat. the fried chicken was nice and crisp with lovely bits of fried batter. the chicken itself was juicy, and the slaw provided a nice contrast to the tender meat. the sauce added some smokey heat without burning the tongue, and the brioche bun rounded out the proceedings with a tinge of sweetness. not sure how authentic this chicken sandwich is, but i look forward to try the other offerings at meatsmith 🤤
