A light flaky pastry (similar to Chinese char siew pastries) is filled with Bresse 🇫🇷 chicken meat and chunks of Foie gras. This is a decadent dish with the already rich filling and pastry served alongside an ultra silky sauce. (70% chicken jus, 30% chicken fat) Absolutely delicious but you definitely need the sour notes of the lightly dressed herb salad at the side to balance out the dish. Very yummy 😋
