These scarlet king prawns from @ester_au has a smokey sweetness to them, complimented by the intense umami from the fermented prawn butter and the crunch of deep fried capers. A couple of drops of lemon juice balances the richness nicely. There are no words to describe this glorious dish. It was perfect in every way. The intensified smokey umami of the bonito, the complexity of that burnt lemon sauce, and the pork fat rounds the dish off with smoothness and such depth.
