The dough is chewy inside and crunchy on the outside. They made their own bread that is worth trying too!

Was it serendipitious that I chanced upon @mr.kneadys sourdough loaf first at The @thecheeseshop, and then their magnificient sourdough pizza at their bakery in Bedok Marketplace, on the same day?

The owner’s passion for baking is only superceded by the irony of him being quite allergic to flour. Thankfully he’s stuck to his guns through stints in America and Iceland, returning to these sunny shores to gift us with an undeniable talent for producing really beautiful bread and pizza.

The best pepperoni in the y-east is a beast –
Light, thin, slightly chewy, topped with a garlicky housemade tomato sauce and perfect ratios of pepperoni, salami and mozzarella.

Besides this, they also have 3 other pizzas including an interesting dessert one topped with creme fraiche and bananas, as well as a selection of breads.

Space Oddity pizza ($12; tomato sauce, pepperoni, salami, mozzarella). The dough was the star of the show - crispy yet chewy crust, with a complex flavour not found in standard pizza bases. Toppings and sauce were generous but not excessive. Overall a simple but very well executed classic pizza. Would return to try the other flavours!

The Smoked Salmon with Creme Fraiche which came served on a thick slice of rugbrød, a Danish style rye bread. The rugbrød here at Mr Kneady is 80% rye, 20% white, and has sea salt, natural sourdough starter, malt, sunflower seeds, pumpkin seeds, flax seeds and sesame seeds.

From Mr Kneady's at Bedok Marketplace which serves up sourdough and other breads (like the Rugbrød here) in loaves, while also serving up a limited menu of sandwiches and Smørrebrød as well.

The Smørrebrød is an open-faced sandwich that uses the Rugbrød as a base; the Smørrebrød itself that is 80% Rye and 20% White and comes speckled with loads of seeds and nuts. I really liked how the bread is crisp on the exterior while moist within for this one, carrying a hint of smokiness while the nuts and seed adds crunch to the sandwich. The salami adds a hint of savoury flavour typical of cured meat, while the pickles cut through the saltiness with its tartness with a zesty, juicy crunch. The cracked Pepper helps add that fresh, peppery aroma to the entire sandwich. At $3.50, I would say it works as a light breakfast/lunch, or even as a fun side to have at the table whilst trying out the other stalls around The Bedok Marketplace.
