To retain the premium meat’s freshness, no pre-seasoning or marination is done and meat is breaded with fresh bread crumbs upon customer’s order. Unlike most Tonkatsu shops, Wafu instead of Goma dressing is used. It makes a better compliment to the fried loin due to its lighter taste, giving an overall balanced taste profile of the dish. And yes, the loin is neither too oily nor gamey, perfect for even non-pork lovers.

This should be a dish welcomed by the family - young and old. With ingredients such as japanese yam and wild fungus, this makes a nutricious pot of goodness. Though the flavours may be a little heavy for those with a light palate, I really love the subtle smokiness that gives a little extra oomph to the dish.

The Tonkatsu broth is absolutely flavourful, a result of having infused with a special sakura ebi pasta and simmered in-house for 12 hours. Ebi fry is breaded (with fresh bread crumbs) and fried upon order, explains the freshness and good bite to it. Tartar sauce is also made in-house!
