I would like to call these Mr Couffy - think Coffee oozing out of fluffy soft buns! Coffee flavour is quite legitly gao with slight bittersweet taste, so best for coffee lovers too.

This dish impressed me pretty much, particularly how the thick miso sauce complements the delicate fillet. Sauce is aromatic and flavourful; The chef revealed this is due to a special recipe of red wine and tonkotsu broth! That being said, the fillet is good in its own right with a good balance of crispness and tenderness. It makes a great alternative for folks who find pork loin a little fatty for their liking.
