Appearances can be rather unassuming, and this may seem rather pricey, but this outshines its counterparts and swooped me off my feet completely. Silky smooth cauliflower creme spiked with sweet white chocolate bits, and the entire dish brought to a whole new game with some fleur de sel and those savoury, umami pearls of delight. This was quite an experience; received a few odd stares when I just couldn't hide my euphoria, kinda embarrassing. Getting this again tomorrow @marinabaysands!

The most striking thing about this dish would be its tremendous value-for-money; you won't believe the enormous portion and variety. Three huge and simply sauteed prawns, fabulously fresh with that firm flesh and sweetness compete with the crispy fried baby squid for attention. A sprinkle of sesame seeds, and a toss of roasted curry leaves for additional flavor, and you have happiness in a bowl. Gently break the raw egg yolk sitting on top of the al-dente pasta, and let all that goodness flow and coat the noodles for a creamier taste and a smoother texture. I don't routinely order anything that will potentially create a mess, but for this, I will make an exception.

Was never a real fan of this humble hawker food, until a friend asked me to try this. Liberal portions of lap cheong and cockles, complete with a sinful sprinkle of fried pork lard bits, atop a heap of excellent wok-fried kway teow flavoured with sweet black soy sauce. Egg was thoroughly mixed and cooked into the noodles, and the dish had a great charry wok hei taste. 40min queue, and all demolished in 10min. Absolutely decadent.

It's been a while since I've felt the need to write immediately after a meal, but this was a very serendipitous find. Wildfire is perhaps more well known for their burger (siracha chicken or triple bacon, anyone?), but a little known secret is that their steaks are arguably just as good as their burgers. Lovingly chargrilled and delightfully tender, this was one thoroughly enjoyable meal; perfectly seared and rich, the secret lies in the choice of cut and attention to detail. The hanger steak is easily overcooked, but if done well, it offers the full bodied, rich beef flavor at a fraction of the cost of other more premium cuts. The sharp Languiole knife helps ensure that the juices end up in the mouth, and not the plate. Kudos to their indie/alternative playlist, and select of craft beers too. If this keeps up, this will be a regular haunt! #burpple
The most impressive aspect of the dish is the perfect amount of smokey wok-hei flavour that had been infused into the noodles and the fat juicy prawns, courtesy of the chef's skills at the ladles; it will hit you with all the right notes. Spiked with plenty fried lard bits and some sio-bak, the pork added a deeper, complex character to the thick and simmering sweet stock, something that is sorely lacking in many mediocre hokkien mees. I had initially thought there was too much stock, but this seemed to be a deliberate decision so the noodles will not be too dry. Alas, the strength of the dish also became its own downfall; perhaps being overzealous with the frying, the squid was definitely overcooked (almost felt as if it had boiled in the stock) and did not manage to retain any flavour. More fried eggs would also be wonderful. Chilli was piquant, just enough to not overpower the dish. The hour of wait was certainly quite painful, but worth a try if you're in the area!
