"Bubur Sum Sum" Coconut foam, mango sorbet and pandan. Tropical flavours which I looooove!

This is my favourite course from the 7 that we had | "Eel in the Green...or was it the yellow" Sous vide Eel, Corn soup, "Angkak" which we were told is a fermented red rice, and crispy chicken skin. The different elements worked harmoniously together. So much so that I wanted another portion!

Done 3 ways - Med-rare leg under the long pepper leaf accompanied with a pineapple jus, followed by Nasi Bakar with lamb liver and the shoulder which is done rendang style with achar.
