Our first proper meal in Jeju will be memorable not just because the galbi was so tender, succulent, and melt-in-your-mouth, nor simply because of the fantastic spread of side dishes including this sweet (raw?) crab smothered in chilli paste. The people in the process leading all the way up the food count as well- from the kind uncle who walked us 4 over blocks to find the relocated shop, to the shop owner who was patient with our mangled Korean phrases coming straight from our Korean-English dictionary. Chicken thighs rubbed with olive oil, paprika, orange zest, and salt & pepper. Baked on a layer of oranges, lemons, and pineapple slices. Served with a couscous salad.
An experiment by the husband, aided by me. A flavourful and sweet peppery pork based soup that I later used to cook sliced batang fish and taukwa in. Asian surf and turf.
