Tiong Hoe Specialty Coffee is a name that should be familiar with most cafe-hoppers these days — a brand that had gone a really long way from being a humble coffee roastery in its early days to one that is synonymous with the third-wave coffee movement. Starting off their cafe operations since 2014, Tiong Hoe Specialty Coffee had since gone from strength to strength with the opening of various outlets within selected FairPrice Xtra outlets, as well as sharing a space with other dining establishments such as that of Twyst at Raffles Xchange in Raffles Place MRT Station and Super Simple at Galaxis in one-north. Further expanding their operations in the Central Business District, Tiong Hoe Specialty Coffee has opened their latest location within Guoco Tower — they have taken up a shop space at Basement 1 that is located beside Sugar Kid, which is also a recent addition to the mall. Operating as a takeaway kiosk, there are communal dining areas located right in front of Tiong Hoe Specialty Coffee that is added in by the mall for those who would like to be seated down to enjoy their cuppa — there are more communal dining areas at Basement 2 as well. Being a named that is most recognised for their specialty coffee, Tiong Hoe Specialty Coffee’s offerings would be centred around their various espresso-based coffee as well as their bottled coffee; the beverages menu also features a Craft Cola, Chocolate, and a variety of artisanal teas. For those looking for something light to munch on, there is a range of Croissant Eclairs that is offered here which they have collaborated with Keong Saik Bakery for — these are also available at Tiong Hoe Specialty Coffee’s main store at Stirling Road as well.
There are actually six (6) different flavours of Croissant Eclairs to go for — the Mushroom Coffee, Sea Salt and Kouign-Amann versions being the ones that are exclusively available at Tiong Hoe Specialty Coffee at Guoco Tower and Stirling Road, while the Lemon Pistachio, Chocolate Banana and Apple Cinnamon are flavours that are available at Keong Saik Bakery locations and the afore-mentioned Tiong Hoe Specialty Coffee outlets. Being a flavour that is exclusive to Tiong Hoe Specialty Coffee and also one that is of a savoury nature, we found ourselves going for the Coffee Mushroom Croissant Eclair to pair with our Oat Zero bottled coffee — the Oat Zero being a bottled coffee that features Oatly oat milk as well as being a decaffeinated option to the Pollen White and Amber Black bottled brews. Taking a bite into the Coffee Mushroom Croissant Eclair, the Croissant Eclair is shatteringly crisp and buttery whilst also being pretty light — the lamination process that creates the layers in the pastry being especially obvious as one chews the Danish apart. Topped off with sautéed Shimeiji mushrooms over the top and what seems to béchamel sauce that lines the pastry beneath the mushrooms, we aren’t quite sure of how the coffee comes into play here — did not quite detect any notes of coffee in here, though the mushrooms are bouncy and gave quite a good textural contrast; all that with a prominent earthiness that went well with the savoury and somewhat cheesy sauce that comes beneath it. We would recommend to have the pastry being warmed up to enjoy it at its best; a great pairing especially with a cup of Long Black on the side as a light bite for breakfast!
