Overall, a fantastic meal at The Principal, i have so much appreciation for Chef Jonas Armay and his team's creativity and finesse. So much attention to detail has been made with its food (less so its service), and its beautiful, intimate interior. Congratulations on recently gaining your 2nd Michelin *!

Parmentier, ceps, ham, peas. One of the Principal's signature dishes. Every element nailed. Delicious.

Steamed foie, Thai consommé, radish, sea grapes. Never have i had foie gras that was this smooth, light and well-cooked. I usually dislike the gamey liver taste but i couldn't stop nibbling at this. The consommé was warming and comforting on a wintery HK night.

Violet ice cream, rose meringue, goat's yoghurt. The desserts were decidedly disappointing, especially following a phenomenal meal of 4 starters+main.
