Wondered how baked pancake mix would turn out, so I poured it into a star-shaped muffin pan, snuck some chopped banana in the middle, and put the oven on auto-pilot. I loved them fresh from the oven, with a crispy crust and gooey centre.
Rolled out of bed at 6.45am to bake this x3.
