Crispy on the outside, soft and smooth on the inside. Wonderfully prepare! There was no gaminess ordinarily found in duck/goose liver. But it was a bit too much for one person. It got a bit too cloying at the end. Perfect for sharing though! Goes well with their house Chardonnay.
