The cheese filling has a mousse like texture, light & airy, paired with a contrasting texture from the pecan filling. Thicker than normal graham base (the way I like it) topped with Bavarian cream. Oh weekends 🥰
Sweet chocolate pastry with spiced dark chocolate ganache topped with cacao nib nougatine (w edible gold flakes!!) The dark chocolate ganache is accented by a blend of spices, including star anise, cinnamon & nutmeg.
First try with the spice and chocolate combination. Must say I do like how you get the dense, rich flavor of the dark chocolate with a pleasant hit of spice at the back of your throat as you swish the silky ganache. It paired perfectly with the additional texture from the nougatine made up of caramel with cacao nibs mixed into them, then spread thinly and broken into shards
Another experiment with miso! But a mild one this time. Miso caramel is somewhat like salted caramel, but with an umami twist whereby the saltiness of the miso perfectly balanced out by the sweetness of the caramel. Goes well with the dense date cake and the honey buttercream frosting!
Explosive flavors in this beautiful spiced glory - Sweet Bosch pears poached in cinnamon, cloves & star anise, rich creamy spiced cheese filling on buttery biscuit base flavored with ginger & cinnamon. The use of the poaching syrup in the cheesecake results in a runnier texture, somewhat like a cross between custard and cheesecake!
Vanilla Honey Naked cake with Orange Blossom frosting, topped with homemade rosewater meringue. Deeply golden sponge cake got its colour and gorgeous caramel flavour from a brilliant new discovery: honey-based honeycomb. Which is essentially honeycomb made from honey instead of sugar & golden syrup. Intrigued by the complexity of the flavor, as compared to using honey in its natural state.
Naked cake is for lazy bakers :P

Matcha cake with matcha buttercream & matcha streusel!! Substituted the butter for coconut oil, was told that it overpowers the matcha flavor. Will use butter instead the next time! 😁
First attempt! The recipe is really moist and the spice taste was well balanced with the fresh applesauce, canned pineapples & mashed bananas (shd have used more ripe ones for better flavor)
