The signature honey butter latte ($5.50) is equally delectable. Ask for less sweet - otherwise the sweetness tends to be a bit too overpowering. The espresso at Mad Roaster is noticeably well balanced with light hints of acidity and bitterness that can still be appreciated despite the honey butter flavoring. The honey butter flavour itself is delicious - very toasty and buttery. Reminds me of butter pecan. 5/5.

Slightly more expensive than other coffee stalls at $2.60 for teh o bing. But I feel it’s worth the additional expense. The teh o is fragrant with very slight acidity (doesn’t have the “siap” taste that is associated certain teh os). There is a hint of floral notes reminiscent of jasmine tea. Very pleasant even as a teh o kosong

Ambience:
We went to Spring Coffee over the weekend. It is a small and quaint cafe located on the second floor of Hong Lim Square. Seating is limited, and the line of patrons waiting to be seated started to build up after lunchtime ( 2-3 pm). There are counter seats and table seats. Table seats allow you to watch the baristas at work. Seems like it would be a good place to study/work on weekdays and hang out with friends over the weekends.

Drinks:
We had their signature drinks - the Spring Latte ($7) and the Spring Matcha ($7.50). The Spring Latte was a lightly sweetened drink with dessicated coconut and likely gula melaka coating the rim of the cup. Strongly recommended for those who like local, tropical flavours. It was difficult to discern the taste of the coffee itself however due to the added flavorings - good for those who don’t quite like the taste of coffee. 4.5/5. The Spring Matcha arrived unsweetened with an earthy and bitter taste of matcha. I think lightly sweetening the drink would have given the drink more balance. 3.5/5.

Staff:
Staff were polite and pleasant. They were prompt in refilling our complimentary cups of water.

Overall impressions:
A great place to chill out after a meal at the nearby Hong Lim Market. Seating is limited however. Probably not worth a special trip but a good option if you’re in the area.
