Now, this cafe staple reminds me of home almost in the same way Roti Prata does 😬

I remember being forced awake at 5AM so that we could meander our way over to the Sydney Fish Market to pick up 6oz for breakfast.

As in ingredient, it's something that some chefs can throw on a menu without much thought. It's trendy...a food catch phrase; people could know nothing about it's complex flavour profile will just order it because it's trendy. I didn't harbour any feelings for uni until I experienced @chefvalvasori's seasonal Sea Urchin Pasta...proves what good ingredients in the right hands can do - it's still one of the best dishes I've ever had in my life.
Lolla's Uni with Squid Ink Pudding reads off the menu like a Buzzfeed listicle, but tastes like a welcome voyage down memory lane. It still astounds me that the supple pudding was able to compliment the creamy Uni to perfection. Savoury on savoury, rich, but moreish...it just works.
