The guac makes the nachos - not the cheese but the guac.
Beware if you're expecting Dorito chips for nachos. This isn't processed food. Toasted corn tortillas that will lao hong if you leave it out for too long so chow down quick!
The good thing is that this can be a dish on its own - it's literally a deconstructed hard taco if you will.

I had the 2 which looks deceptively little, deceptively.
The steak as steak would be, was delicious. A little tough though. I can sort of appreciate it being chopped into cubes rather than strips (because you get to enjoy the beef throughout the taco rather than sliding strips out as you eat and leaving only the salsa and cheese by midway)

The pork was however a little too dry. The staff definitely slobbered on a ton of sauce that soaked through my taco so I technically had both hard and soft taco hahaha but the meat didn't quite retain much of the moistness it could have in the slow roasting process.
I still dream of the beef taco. Is that a good thing?

Heat garlic.
Fry sausages till lightly browned.
Add diced tomatoes and cook well.
Add a bit of raw garlic to the mix for texture.
Salt.
Add cooked pasta.
Toss and add some pasta water.
Salt.
Add herb.
Garnish with paprika/cayenne and a wedge of lime.
Done.
