Damn look at the ingredients. Everything is a huge piece, not small chunks. The smooth congee has a somewhat sharp saltiness, not much sweetness. It's ok
Small intestines has an intense porky umami, it's really good. Large intestines has a bit of chew, the liver is average, and their signature meatballs came in 4 pcs(instead of one each for the innards). The pork meatballs were peppery, sweet, spongy and chewy. Pretty good.
The way Thai people use pepper is very restrained and makes a lot of sense.
