One of my fave Indonesian dishes is their famous Nasi Goreng, which literally translates to "fried rice". This Thai fried chicken goes well with it too and the tamarind sauce just makes all the difference!

Hainanese Chicken Rice
Hainanese chicken rice is a dish of Chinese origin, and is a popular dish in Malaysia and Singapore. It is a dish of delicately poached chicken infused with ginger, which is accompanied by rice cooked in chicken stock, a bowl of the hot stock itself (not pictured here), and various sauces (my favourite is the ginger sauce!). Probably not the most appealing dish but it's super tasty!

Filipino Chicken Adobo
Adobo (which in Spanish translates to "marinade") is the unofficial national dish of the Philippines. So it is our duty as Filipinos to introduce this dish to other cultures. Almost everyone has their own version of how to make this dish. It's quite simple and yields the same delicious and comforting taste that always reminds us of home.
I think I've found MY favourite version of how I'd like my adobo cooked. After trying this version, I can never go back to doing it the typical way. Basically, I used my handy dandy slowcooker to do the job, and mixing in all the traditional ingredients. After 5h, I separated the chicken pieces and broiled it for a couple of minutes (so the chicken is not too mushy/fall apart). Meanwhile, I reduced the broth in half and poured the sauce over the chicken and garnished it with green onions. Best served with a bowl (or two!) of hot jasmine rice. The reason why I like this version is that the flavour really seeps into the chicken, which I seem to can't perfect doing it the traditional way.
TIP: Got leftovers? Flake the chicken and make adobo fried rice!

Costa Rican Breakfast.
If there are two things I love in life, it is eating and travelling. Combine the two and I'm in heaven! When I travel to a different place I make sure that I immerse myself in their culture and food as much as possible. So rarely do I ever eat "western" food while I'm on vacation!
So when I was in Costa Rica, that was exactly what I did! Like in my own culture, rice is also a big staple and is usually served for all 3 main meals. Except their rice is always with beans. My fave part of this breakfast is the plantain. The cheese is an interesting addition (though typical) but what I love most are the colours! It's like a fiesta in my mouth!

Filipino Food: Pancit Palabok
Since this is my first post here on F3, I thought I'd present something that I've personally made myself. Think "pot luck". Anyway, it was my very first time making this Filipino noodle dish. I was pretty happy with the outcome but it's definitely not something I would make everyday! A lot of labour went into this as you can see with the ingredients. But it was pretty worth it since it's also one of my favourites. It's presented well with all the melange of colours and it is also bursting with flavours, not to mention all the different textures. Palabok can be as plain as having just a few toppings, but I went all out and made a "supreme" version and added all the typical toppings from crunchy "chicharon" to "tinapa flakes". I'm not gonna lie, I had to have more than one serving of it!
