Teppan-Ya's rainbow roll is a chunkful of sushi rice that has sufficient tenacity to combat the weight of its complementary ingredients. Thick, succulent shreds of crab meat and avocado are first wrapped with seaweed, followed by a layer of sushi rice before finally topped with a fresh slice of sashimi (salmon, tuna and snapper). The natural sweetness of the crab lifts the creamy avocado while the different sashimi adds varied textures and depths to the dish.
