The ika was served looking slightly grilled, stuffed with squid ink butter and topped with a pop of golden uni. I think we struck gold with this one. The ika was fresh and had a very good bite to it that was not overly springy. The squid ink butter complemented well with the ever-so-lightly prepared squid, I guess that was done so that there the natural taste of the squid could come through. The ratio of the squid ink butter and uni was just right so that you could pair the flavourful uni with the ika as well.
